PIT MASTER: JAMEY VELASQUEZ, 62ndStBBQ
Jamey Velasquez didn’t particularly choose restaurants as a career, working in a restaurant in-fact, choose him. When he started cooking in his first restaurant as a young man, he knew immediately, that very first day, that working behind the stoves of a kitchen was where he wanted to be. He was instantly seduced by the precision, excitement, challenge and comradery of working in professional kitchens. From that first line cook job he was addicted, and he has continued working in kitchens from that first day through now; 31 years of experience under us toque. Starting at the bottom and working his way up through the kitchen brigade, Jamey earned his chops the hard way, securing every promotion and new position, through hard-work, blood, sweat and tears.
Always inspired to seek out new challenges while he was fostering his career as an Executive Chef; the art, skill, technique and challenge required to create really outstanding BBQ intrigued him. He bought a home-style BBQ smoker and began experimenting, that initial intrigue quickly grew to a passion. As his BBQ skills grew, he built his own smokers from spare pieces and parts, before moving on to more sophisticated professional smoking equipment that he custom modifies and “tunes-up” to meet his high standards.
To test his metal as a Pit Master, and for the pure joy of competing with some of the country’s best, Jamey began entering BBQ competitions, and he persisted his through failures and learned from his successes. Adjusting even the smallest of details such as specific sources for the best meats, wood quality and moisture content, adjusting seasonings and smoking temperatures for different cuts of meat, compensating for ambient air temperature and humidity, and adjusting for the natural inconsistencies found in every single cut of meat. He has learned to adjust the dozens of variables involved in the skill, technique and art of making great BBQ. Jamey has much less time these days for the competitive BBQ circuit, but when he does enter, he is regularly make his mark in the top 20 of national cook-offs. He continues to enjoy perfecting his craft each and every day, and learns something new every time he throws meat on the smoker.
62ndStBBQ is what Jamey calls his “First Baby” as it is his first venture in the BBQ Business; the culmination of a lifetime of classic culinary training, paired with his fiery commitment to ultra-high quality BBQ’ed meats, unique, delicious sides and homemade desserts. Each and every time he fires up the pit, he strives not only for quality, but for perfection. These days Jamey tests his Pit Master metal by producing outstanding BBQ products that enhance and elevate occasions for his customers.
